Why should I make homemade Italian dressing mix?

We make our own Italian dressing mix because we like knowing what we are consuming! One of the most popular store-bought Italian dressing mix packets has sugar as the first ingredient. It also contains “natural flavor, soy sauce, xanthan and guar gum, and “spices” among other ingredients. While we are not completely against buying this in a pinch, I would prefer my family be consuming ingredients that we know and are familiar with as much as possible.
