Even though the name of this recipe is Crock Pot Creamy Italian Chicken, you can make this quickly on the stove. I’ve done it a few times but I like the crock pot version better. In order to make this on the stove, you’ll need a deep skillet or a pot. You’ll sear the chicken on medium-high heat, then add all of the other ingredients. Turn the heat to low and let the liquid simmer for about a half hour. Stir it occasionally and make sure the chicken has an internal temperature of 165 degrees.

 

What kind of chicken should I use for Creamy Italian Chicken?

I use one pound of boneless skinless chicken breast or chicken tenders every time I make this recipe. My family is not a fan of chicken thighs but if you and your family like them, they would taste great with this! Just make sure to use boneless and skinless.

 

What should I serve Creamy Italian Chicken with?

The night we made this meal, I served it with salad and pasta. The meat is excellent as a sandwich too, but I make sure to add pickles to the sandwiches to help cut the richness of the dish. This dish would be great served on top of a bed of spinach or with spinach stirred into it! Because of the creaminess of the dish, it’s great to serve it with something that has some acidity to it. So salads with a vinaigrette, fresh corn, sliced tomatoes, and coleslaw are all good options.

Can I make Crock Pot Creamy Italian Chicken on high instead of low?

You can! If you’re making this dish on high heat instead of low, decrease the initial cooking time to only 2-3 hours instead of 5.  Once the chicken is cooked, add the cream cheese, heavy cream, and chicken stock and have that cook for about a half hour instead of an hour. Remember, the chicken isn’t done until it has an internal temperature of 165 degrees.

How to Make Crock Pot Creamy Italian Chicken

1 lb boneless and skinless chicken breast or chicken tenders

½ cup of heavy cream or half and half

1 ½ cup chicken stock

8 oz of cream cheese

2 tablespoons of Italian dressing mix

 

Place 1 pound of chicken breasts or tenders into a crock pot. Sprinkle 2 tablespoons of Italian dressing mix on top of the chicken. Put the crock pot on low and allow the chicken to cook for 5 hours.

After five hours, add ½ cup of heavy cream or half and half and 1 ½ cup of chicken stock to the crock pot. Cut the 8 oz of cream cheese into small blocks and add to the crock pot. Stir and let sit for one more hour. At this point, the chicken should be cooked through and falling apart.
