Roasted carrot fries are a great way to add vegetables to any meal! Quick and easy to make, they are crisp and salty on the outside and soft and sweet on the inside. Read on for questions and answers, and the directions to make them!

Are carrots healthy for you?

Carrots are really healthy for you! They are high in B vitamins, A vitamins, and an assortment of other nutrients!

 

How can I make roasted carrots quickly?

Instead of using whole carrots that you have to peel first and then chop to the appropriate size, you can use baby carrots that are already peeled and simply slice them in half. Additionally, you can peel and slice these carrots up to a day or two ahead of time and keep them in a sealed container until you’re ready to roast them!

 

What can I dip roasted carrots in?

I recommend the spicy mayo that we have the instructions for below. If you’re not into spicy food, you can dip it in ranch dressing too. We have a great homemade ranch dressing on The Homesmiths that you can find here!

 

Can I season roasted carrot fries?

Absolutely! I seasoned ours with just salt this time but the possibilities are endless. You could do garlic and onion, rosemary and thyme, salt and vinegar, or chili seasoning on your roasted carrots.

How to Make Crispy, Oven-Roasted Carrots and Spicy Dipping Sauce

Ingredients:

2 lbs of carrots, peeled and sliced into french fry size of your choice (Save your carrot ends and peels for homemade chicken stock!)

3 tbsps of Olive Oil

1 tbsp of salt

½ cup of mayo

2 tbsps of hot sauce

2 tsp of salt

Preheat the oven to 425 degrees. Toss the two pounds of peeled and sliced carrots in 3 tablespoons of olive oil and 1 tablespoon of salt. Two pounds may sound like a lot of carrots but when they are cooked, they are eaten so quickly! Next time I will double this recipe. Our whole family loved them and asked for more even when they were gone.

Spread the carrots into a flat, even layer, on a tinfoil lined baking sheet. If you have the space in your oven, you can use two baking sheets. The more spread out they are, the easier and more evenly the carrots will cook. Bake for 25-30 minutes. You want them cooked through, and then to the texture of your choice. We like them to be slightly blackened.

In the meantime, mix up the spicy dipping sauce. In a bowl, combine ½ cup mayo, 2 tbsps of hot sauce, and 2 tsp of salt. Mix thoroughly and let sit in the fridge until ready to serve. You can always decrease the hot sauce by half and slowly add more to taste if you’re nervous about the sauce being too spicy!
