Crispy, Oven Roasted Carrot Fries
- Preheat oven to 425 degrees.
- Toss the two pounds of peeled and sliced carrots in the 3 tablespoons of olive oil and 1 tablespoon of salt.
- Spread them into a flat, even layer, on a tinfoil lined baking sheet.
- Bake for 25-30 minutes. You want them cooked through, and then to the texture of your choice. We like them to be slightly blackened.
Spicy Dipping Sauce
- In the meantime, mix up the spicy dipping sauce.
- In a bowl, combine ½ cup mayo, 2 tbsps of hot sauce, and 2 tsp of salt. Mix thoroughly and let sit in the fridge until ready to serve.
