This crispy, cheesy, baked chicken is a delicious dinner that comes together quickly and with little effort. It’s a favorite dinner in our house and a meal that we happily serve to guests!

Can this be gluten-free?

This recipe can be gluten-free! instead of bread crumbs, you can use Parmesan cheese or crushed pork rinds. Use equal parts pork rinds to bread crumbs, but use half parmesan cheese to bread crumbs because of the salt content. 

 

What type of breadcrumbs should I use?

I used homemade sourdough bread crumbs, but you can use whatever you find in the store if you would like.  use unseasoned ones so that the spices can shine through in this recipe. Panko bread crumbs would be ideal because of how fine they are, but that would be a personal preference. 

 

What cheese should I use for this?

I use whatever cheese I have on hand. that’s one of the great things about this versatile recipe. I used mozzarella cheese for this meal, but I will often use cheddar or some sort of Italian blend. Monterey Jack would be great too!

 

What other spices can I use?

The spices in this dish are very close to what would be in a store-bought Ranch packet, so you can replace the spices with one pocket of ranch dressing mix. you can add or omit spices and Seasonings to your preference. Instead of the ranch, you could do an Italian dressing seasoning mix.

 

What can I replace the chicken tenders with?

You can replace the chicken tenderloins with chicken cutlets, thin sliced chicken breasts, or boneless skinless chicken breasts that have been sliced open and pounded thin.

Directions for Crispy, Cheesy, Baked Chicken

Ingredients:

3 lbs of chicken tenderloins

1 cup breadcrumbs (unseasoned)

1 tbsp parsley

½ tsp dill 

½ tsp onion powder

1 tsp garlic powder

1 tsp salt

¼ tsp pepper

1 cup shredded cheese of your choice

4 tbsp butter, melted

2 tablespoons mayonnaise 

 

Preheat the oven to 425 degrees. Pound the chicken tenders individually with plastic wrap until evenly thin. You can use a mallet or the bottom of a pot or pan. You don’t have to use chicken tenders. As mentioned above, you can use thinly sliced chicken, chicken cutlets, or boneless skinless chicken breasts that have been sliced thinly and pounded out.

In a bowl, combine 1 cup of breadcrumbs, 1 tbsp parsley, ½ tsp each of dill and onion powder, 1 tsp each of salt and garlic powder, ¼ tsp of pepper, and 1 cup of shredded cheese. I used mozzarella for dinner this time, but I’ve enjoyed the results with multiple kinds of cheeses!

Mix the bowl of ingredients thoroughly and then stir in the 4 tbsps of melted butter.

Place the chicken onto a tin foil-lined baking sheet. Spread a bit of mayonnaise on each chicken tender using a knife or pastry brush. You can use more or less mayo to your preference.

Cover each piece of chicken evenly with the breadcrumb and cheese mixture. I push it down onto each piece of chicken to make sure that the top is thoroughly coated.  You can see the gluten-free variation I made in the top right corner of the picture below!

Place the tray in the oven and cook for 15 to 20 minutes, until the chicken is cooked through. chicken is cooked when it reaches an internal temperature of 165 degrees Fahrenheit.
