Chocolate Chip Cookie Pie

 

A chocolate chip cookie pie was introduced to me several years ago by a sweet friend. I don’t remember the occasion or who else was there, I just remember loving both the taste and the idea. We enjoy chocolate chip cookies and those are great to make when we have to bring a dessert somewhere, but sometimes I don’t want to take the time to roll out cookies and bake individual cookie sheets for ten minutes at a time. This recipe is great because the dough comes together in less than 15 minutes and then I can just throw it into the oven and do other tasks uninterrupted for at least 30 minutes. 

Ever since I had that cookie pie, I have tried to follow different recipes to achieve what she had made but I haven’t found one that I liked yet. Some call for a literal pie crust, some call for way more or way less chocolate, varying amounts of flour, etc. I have played with recipes until I concocted one that I like best of all. 

The ingredients are simple and I use half of the amount of sugar I’ve seen other recipes call for. The bake time is 30-35 minutes based on your desired level of doneness. We like it to be gooey so we cook it for less time. (Note that “officially” the temperature of cookie dough to be done and considered safe is 175-185 degrees.)

This dessert is a favorite year-round dessert for our family to eat and bring to friends’ houses or church gatherings. 

What is chocolate chip cookie pie?

Chocolate chip cookie pie is a simple dessert that takes all of the ingredients for chocolate chip cookies and puts the dough into a pie plate, baking for at least 30 minutes.  

 

What kind of chocolate chips should I use for chocolate chip cookies or chocolate chip cookie pie?

Use whatever kind of chocolate chips you like. I tend to prefer a more savory or less sweet cookie so my go-to is dark chocolate chips but I use what I have in hand. For the purpose of this blog post, I used semi-sweet chocolate chips.

 

How to make chocolate chip cookie pie: 

Preheat the oven to 350 degrees. Grease the bottom of a pie plate with butter or oil. I use an oil dispenser like this.


Family Forging Tip: If you pre-measure ingredients into bowls ahead of time, your children can help you make the cookie pie by pouring the ingredients into the mixer.

In a mixer, blend ¾ cup brown sugar and 1 ½ cups of softened butter for 3-5 minutes. Blend the ingredients until the dough is light in color. I would overmix versus undermix whenever I am blending these two ingredients. 

Scrape down the sides of the mixer and add two eggs and 1 tsp vanilla extract. Mix at medium speed until incorporated. This step took close to five minutes before I could visually see the ingredients blending well. I’m not sure why it takes so long, it may be because I don’t use as much sugar as some other recipes I’ve seen. 

Add the 2 cups of flour, 1 tsp sea salt, and ¾ tsp baking soda. Mix on low to medium speed until blended. This should only take a minute or two. 

Once you can’t see the flour any more, add 1 ½ cups of chocolate chips. You can use whatever kind you would like, I had semi-sweet but I’ve used dark chocolate chips before. Mix for a minute until the chocolate is throughout the dough.

Pour (or scoop) the batter into the greased pie plate and flatten and evenly spread the mixture. I used an offset spatula for this and it made the job really easy.

Bake the chocolate chip cookie pie for at least 30-35 minutes or until the center is fully set and doesn’t have the raw shine on it. Cookie dough is officially fully cooked when the internal temp is 175-185 degrees. I have an instant-read digital food thermometer that I use to check the temperature of any food that I’m unsure of the doneness of. It’s very similar to this one that I found on Amazon.

Let the cookie pie rest until fully cooled. The pie will continue to cook slightly due to the residual heat and this helps it to fully set. You can see in my pictures that the center was slightly underdone because the center of the pie is sunken in compared to the edges.

Ingredients
  

  • ¾ cup butter softened
  • ¾ cup brown sugar packed
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp sea salt
  • ¾ tsp baking soda
  • 1 ½ cup chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees
  • In a mixer, blend together the brown sugar and softened butter for 3-5 minutes until light in color.
  • Add eggs and vanilla extract. Mix until fully incorporated.
  • Add the dry ingredients, (flour, salt, baking soda) and mix until fully incorporated.
  • Add the chocolate chips and mix until evenly blended in.
  • Pour the dough mixture into a greased pie plate and press in until flat and even along the top.
  • Bake at 350 degrees for 30-35 minutes, until baked through. When it comes out of the oven, don’t cut into until completely cooled. You can heat it later in the microwave or the oven at a low temp, but the pie needs to cool so that it can set up.
