Spinach and Feta Casserole with ground beef and rice

 

 

This Spinach and Feta casserole is made with rice and ground beef. It’s delicious and easy to make. It’s high in protein and iron which makes it a healthy meal option too!

Is this casserole gluten-free?

It is! Rice is the starch that we use in this recipe. If you don’t care if this recipe is gluten-free or not, you can sub the rice for an equal quantity of cooked orzo or pasta!

 

Can I make this a grain-free casserole?

Sure! Instead of rice, you can substitute it for an equal quantity of cauliflower rice.

 

What should I serve with a Spinach and Feta Casserole?

This casserole is nice because it doesn’t need any sides. If you’re looking for some ideas though, I recommend a loaf of sourdough bread. 

 

Do I have to use ground beef for Spinach and Feta Casserole?

Nope! You can substitute the ground beef for ground chicken or even diced chicken breast if you prefer.

How to make a Spinach and Feta Casserole with Rice and Ground Beef

Special Equipment:

None needed! Here are some of the tools that I used though!

9×13 glass baking dish

Large Caraway skillet

Measuring Cups

Measuring Spoons

 

Ingredients:

1 lb ground beef

1 medium onion, diced

salt and pepper to taste

1 teaspoon of garlic powder

1 tsp dried oregano

2 cups of cooked rice

2-12oz packages of frozen spinach (You want about 24 oz of frozen spinach, slightly more or less is fine depending on what size packages are available for you)

½ cup milk (we used almond milk)

1 cup sour cream

½ cup feta cheese

½ cup mozzarella

Preheat the oven to 350 degrees.  In a large skillet, saute the diced onion and ground beef until the beef is fully cooked. Season the meat lightly with salt and pepper.  Defrost the frozen spinach according to the package directions. Squeeze out all of the liquid to the best of your ability.

Take the skillet off of the burner. Add the rest of the ingredients to the skillet and mix until incorporated. Alternatively, you can mix it in the baking dish that you will be cooking it in, or pour it all into a large bowl so that you can ensure that it’s all mixed.

Pour the mixture into a 9×13 baking pan and spread it out evenly.  Bake at 350 for 30-45 minutes or until the mixture is bubbly and the edges are getting a bit crispy.  Serve hot.
