Spinach and Feta Casserole

Gluten-free, made with rice and ground beef.

Ingredients
  

  • 1 lb ground beef
  • 1 medium onion diced
  • salt and pepper to taste
  • 1 teaspoon of garlic powder
  • 1 tsp dried oregano
  • 2 cups of cooked rice
  • 24 oz frozen spinach You want about 24 oz of frozen spinach, slightly more or less is fine depending on what size packages are available to you.
  • ½ cup milk
  • 1 cup sour cream
  • ½ cup feta cheese
  • ½ cup mozzarella

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a large skillet, saute the diced onion and ground beef until the beef is fully cooked. Season the meat lightly with salt and pepper.
  • Defrost the frozen spinach according to the package directions. Squeeze out all of the liquid to the best of your ability.
  • Take the skillet off of the burner. Add to the skillet the rest of the ingredients and mix until incorporated. Alternatively, you can mix it in the baking dish that you will be cooking it in, or pour it all into a large bowl so that you can ensure that it’s all mixed.
  • Pour the mixture into a 9x13 baking pan and spread it out evenly.
  • Bake at 350 for 30-45 minutes or until the mixture is bubbly and the edges are getting a bit crispy.
