This gluten free meatball recipe is full of flavor and can be made ahead of time or in bulk to freeze. They don’t require specialty ingredients even though they are gluten free because the recipe calls for Parmesan cheese instead of bread crumbs.

Do I have to use Parmesan cheese in this gluten free meatball recipe?
The parmesan cheese is what is used to help bind these meatballs. If you don’t want to use the cheese, you can use gluten free breadcrumbs to bind them and still keep the recipe gluten free.
What kind of meat should I use?
I use 80/20 ground beef and usually combine it with another type of ground meet, usually pork or chicken. You can use any type of ground meat, but if you use a leaner meat like venison, plan to mix it with a fattier meat like pork.
Can I freeze these gluten free meatballs?
Yes! I recommend freezing them on a tray first for an hour or two and then transferring them to a freezer bag. Squeeze all the air out, seal, and label. Use within 2-4 months. I usually double or triple this recipe so that I can make extra meals for the freezer!

What specialty equipment is needed for this gluten free meatball recipe?
You don’t need any special equipment to make this recipe. A 1-ounce cookie scoop will make it easier, but it’s not necessary. Here are a few of the things that we regularly use in our kitchen!
Gluten Free Meatball Recipe
Makes about 30 1 ounce meatballs
Ingredients:

1 pound of meat
1 egg
½ cup of parmesan cheese
2 teaspoons of salt
1 tablespoon oregano
1 tablespoon garlic powder
¼-½ cup of grated onion (one medium onion)
Instructions:

Combine all the ingredients in a bowl and mix them together thoroughly using your hands or a mixer.

Heat a skillet to medium-high heat. Sauté a very small portion of the meat mixture until cooked through (165 degrees) to make sure you are happy with the seasoning. Adjust seasoning to taste. Do this before you roll them all out, it will save yourself a lot of work if you don’t like the taste and feel the need to adjust! Roll or portion out the meat into 1-ounce portions. Next, cook them one of two ways.

Sear the meatballs in batches in a saute pan, on medium heat for 8-10minutes or until the internal temperature of the meatballs reaches 165 degrees. This is our family’s preferred way to cook them because we like the crust that develops on the outside.
Bake at 400 degrees in a preheated oven for 17-20, until the internal temperature of the meatballs reaches 165 degrees. To do this, line a baking sheet with tin foil and place the meatballs evenly spaced apart. Baking the meatballs is great if you’re making a bulk batch or want to be able to walk away while they are cooking, and searing them is excellent if you’re planning on making sauce right away.
To make a delicious sauce (or improve store-bought sauce), when all of the meatballs are cooked, remove them from the pan and heat or make your tomato sauce in the same skillet, gently stirring up the browned bits that stuck to the bottom of the pan.
