What makes this a “cinnamon roll” baked oatmeal?

There is a larger-than-usual quantity of butter (or oil) in this recipe compared to what I would normally put in baked oatmeal. The extra butter gives it the cinnamon roll baked oatmeal a more decadent taste and texture. It also calls for 2 tablespoons (not teaspoons) of cinnamon, so that flavor is the boldest.

We have made this with butter and vegetable oil. While both are delicious, we prefer it with melted butter.

 

What kind of oatmeal should I use for this baked oatmeal recipe?

This recipe was tested with old-fashioned oats. You can make it with quick oats and not adjust the recipe, but your baked oatmeal will be more moist, and less dry and formed.

How to Make Cinnamon Roll Baked Oatmeal

Special Equipment:

No special equipment is needed, but an immersion blender can make it easier!

I also use a Danish dough whisk to mix my dry ingredients, but you can use a regular whisk or a large fork.

Here’s the Caraway baking pan that I use

Ingredients

4 eggs

3 cups of milk

1 tsp vanilla extract

1 cup of butter or oil

6 cups of oatmeal

½ cup of white sugar

½ cup of brown sugar

4 tsp baking powder

2 tbsp cinnamon

1 tbsp salt

 

Preheat oven to 350 degrees. Grease a 9×13 pan or use a nonstick pan.  Combine all of the dry ingredients in a bowl so that they are mixed and the baking powder, cinnamon, and salt are well incorporated. In a seperate large bowl, combine all of the wet ingredients and mix them thoroughly. I use an immersion blender for this part because it goes a lot faster and really breaks up the eggs, but you can easily use a whisk or fork!

Add the dry ingredients to the wet and mix until the oats have been fully incorporated. Bake for 35-45 minutes, until the center of the baked oatmeal is set. Serve warm. What kind of breakfasts does your family usually eat?
