What is coffee cake?

 

Coffee cake, despite it’s name, does not contain coffee. It’s a cake that takes a lot of butter and is heavier than a regular cake but lighter than a pound cake. Coffee cake usually has a crumb topping.

 

Do I need to use active sourdough starter for this Sourdough Coffee Cake Recipe?

 

This cake is best with active sourdough starter, but you can use discard because the recipe relies on baking soda for the rise!

Sourdough Coffee Cake Recipe:

 

 

Topping:

 

½ cup white sugar

½ cup flour

4 tbsp butter

1 tsp cinnamon

 

Cake:

 

2 cups of active sourdough starter

⅔ cup of melted butter

2 eggs

1 tsp vanilla extract

2 cups of flour

1 ½ cups of white sugar

½ cup of brown sugar

2 tsp baking soda

1 tablespoon of cinnamon

1 teaspoon of salt

 

Directions:

Preheat the oven to 350 degrees. Prepare a 9×13 baking dish (if you use nonstick spray, parchment paper etc). In a bowl, mix together the starter, butter, eggs, and vanilla. Add the white and brown sugar and mix thoroughly.

Add in the flour, baking soda, cinnamon, and salt. Mix until it’s incorporated, but don’t overmix. Pour into your prepared 9×13 pan.

In a separate bowl, combine the topping ingredients until crumbly. Sprinkle over the top.  Bake for 40-45 minutes or until it’s baked through.  If you pull it out around the 40-minute mark, it will be more crumbly and light. If you wait until the 45-minute mark or a little later, the cake will be a bit denser and easier to handle by hand.
