Preheat the oven to 350 degrees. Line a baking sheet with tin foil.
Arrange flour tortillas on the tin foil. This makes four servings so depending on how you want to serve it, you can just place two tortillas side by side and make two whole ones or you can fold each tortilla in half to do four halves.
Spread the honey mustard on the entire tortilla. (All four of them)
Spread the cheese on the tortilla. If you don’t have smoked Gouda cheese you can replace it with more cheddar cheese. Place the thinly sliced apples on the quesadillas. If you have raw or sauteed onions, you can put them on now too. Fold the quesadilla top onto itself or place the other tortilla on top.
Bake at 350 for 4-5 minutes, until the cheese is melted and the bottom is crispy. Flip the quesadilla over and cook for another 3-4 minutes for the other side to crisp up too.
Let cool for five minutes before slicing and serve. The apples are very hot and keep the whole quesadilla warm so if you’re making this for a crowd, you can make it so that it’s coming out of the oven about 10 minutes before you’re ready to serve.
