Ingredients

Filling
  • 8 or 9 apples around 3 ½ lbs
  • Pinch of salt
  • 1 ½ tsp ground cinnamon
  • ¼ tsp nutmeg
  • ¼ cup of flour
  • ½ tsp vanilla extract
  • ½ cup of sugar
  • Juice of ½ lemon about 1 ½ tablespoons
Topping
  • 2 cups flour
  • 2 cups sugar
  • 1 egg
  • 2 tsp baking powder
  • Pinch of salt
  • 1 ½ sticks of butter softened, but not melted

Method

  1. First, peel, quarter and slice the apples. The thinner you slice them, the less solid apples you’ll have in the final dish.
  2. Preheat the oven to 375 degrees.
  3. Next, mix the peeled and sliced apples in a bowl with a pinch of salt, 1 ½ tsp ground cinnamon, ¼ tsp nutmeg, ¼ cup of flour, ½ tsp vanilla extract, ½ cup of sugar and the juice of ½ of a lemon (this is about 1 ½ tablespoons).
  4. Pour this mixture into a 9 x 13 pan.
  5. In a bowl, combine all of the topping ingredients until thoroughly incorporated. Spread evenly over the apple topping.
  6. Bake at 375 for about 35 minutes, until the topping is golden brown and the filling is bubbling.
  7. Let the apple cobbler rest for 10 minutes before serving so that the apple filling sets a little bit.
  8. Serve warm, plain or with vanilla ice cream and enjoy!
