Cowboy Soup- A Crock-Pot Dinner

A simple soup that requires only a few minutes of hands on time

Ingredients
  

  • 1 lb ground beef cooked and seasoned
  • 2 cups salsa
  • 2 cups diced tomatoes
  • 1 onion diced finely (or ½ cup dried minced onion)
  • 1 cup of uncooked rice
  • 1 tablespoon garlic powder
  • 1 tablespoon taco seasoning
  • 5 cups water

Instructions
 

  • In a crock pot, combine 1 lb of ground beef that has been cooked and seasoned, 2 cups of salsa, 1 diced onion, and 1 cup of uncooked rice.
  • Note: Your onion needs to be finely diced or it will not be cooked through by the time the soup is done. If you want to use larger pieces of onions that you want cooked through, cook them in the saute pan with your ground meat. Alternatively, omit the raw, diced onion and add ½ cup dried, minced onion instead.
  • Next, add 1 tablespoon of garlic powder and 1 tablespoon of taco seasoning.
  • Add 5 cups of water and stir.
  • Set the crockpot on low for 4 ½ to 5 hours, until the rice is cooked through.
  • Prior to serving, taste and add salt and pepper as needed to taste.
  • Once done, serve hot and topped with sour cream and cheese. Can be served with bread, tortilla chips, or cornbread.
