- Chop six slices of bacon and saute in a small saucepan. Once done, remove the bacon while keeping the bacon grease and add chopped onions and saute until translucent.
- Add minced garlic, salt, pepper, and dried herbs, sauting together until the garlic is fragrant.
- Pour in the wine and cook until the liquid is almost completely gone, burning off the alcohol. Remove from the heat.
- Add the cooled onion mixture to a bowl with the diced apples and cooked bacon, and mix together.
- In a large bowl, combine the ground chicken, apple mixture, and bread crumbs, mixing until thoroughly incorporated. Start with ¾ cup of breadcrumbs and slowly add more until you’re comfortable with the texture.
- Portion the meat mixture into 8 equal parts, shaping into patties. **See Note Below
- Prior to cooking, lightly salt each side of the burger.
- In a frying pan, heat a tablespoon of olive oil (or vegetable oil).
- Cook on medium heat for about 15 minutes, turning halfway. The burgers are done when the internal temperature is 165 degrees.
- Place the chicken apple burgers on the buns and dress them with toppings.
Notes
*Toppings could include grilled apple slices, sauteed onions, sliced red onions, or cheddar or Colby jack cheese.
**The burgers can be cooked right away at this point. I placed them in the refrigerator for about 4 hours, until we were ready for dinner. But I froze the rest of them as my husband and I were only eating one each. In order to freeze wrap each individual burger in parchment paper and store it in the freezer in a freezer bag.
