Arroz Con Habichuelas

This recipe is a traditional Puerto Rican recipe for Spanish Yellow Rice and Beans

Ingredients
  

  • 1-2 tablespoon olive oil
  • 4 tablespoons Puerto Rican Sofrito
  • 2 teaspoons salt
  • 8 ounce can of tomato sauce
  • 2 cups water
  • 2 cups rice
  • 2 10- ounce can of beans of your choice drained

Method
 

  1. In the bottom of a pot on medium heat, add the olive oil, salt, and sofrito.
  2. Stir and let it cook until heated through and aromatic. Then, add the tomato sauce and water.
  3. Allow the ingredients to come to a boil, and then add the rice.
  4. Return the water to a simmer. Allow to simmer for about 5 minutes and then add the drained beans.
  5. Cover and let it cook on low for about 10 minutes. Stir, and then cover again, letting it continue to cook for another thirty minutes.
  6. Remove from the heat and let sit for 5-10 minutes before gently stirring the rice and beans.
  7. Serve warm and enjoy!
