This Chilled Strawberry Bisque recipe is a favorite of mine. I first tried a cold fruit soup on a cruise, and I have loved it ever since. Chilled soups are great for warm weather or as an appetizer or starter for brunch, a luncheon, or dinner. 

 

 

Do I have to use frozen strawberries for this recipe?

I have never made this soup without using frozen strawberries.  Frozen strawberries blend well and tend to have a smoother and softer texture than fresh strawberries. Feel free to try this recipe with fresh strawberries and let us know what you think!

 

What should I serve Chilled Strawberry Bisque with?

This soup can be served with light luncheon food like tea sandwiches or as an appetizer to a heavier dinner like steak. Personally, I also enjoy it as a partner to a summer salad.

This soup required 8 hours to chill, but you can make this a day in advance easily.

How to Make Chilled Strawberry Bisque

Special Equipment:

Blender- we’ve had our Ninja blender for 6 years and love it!

Ingredients:

3 cups of frozen strawberries

½ cup of heavy cream

2 ¼ cup of milk of your choice

¾ cup of sour cream

2 tbsps of sugar

A pinch of salt 

Optional garnish of fresh mint, basil, or even lavender

This recipe is so easy! Combine all of the ingredients in the blender except for the garnish and blend until it’s smooth. The only texture may be the strawberry seeds depending on the strength of your blender.   Transfer the mixture to a bowl and chill for at least 8 hours. This allows the flavors to blend well. Serve chilled, and stir before serving, topped with the garnish of your choice.

Ingredients
  

  • 3 cups of frozen strawberries
  • ½ cup of heavy cream
  • 2 ¼ cup of milk of your choice
  • ¾ cup of sour cream
  • 2 tbsps of sugar
  • A pinch of salt
  • Optional garnish of fresh mint, basil, or even lavender

Instructions
 

  • This recipe is so easy! Combine all of the ingredients in the blender except for the garnish and blend until it’s smooth.
  • Transfer the mixture to a bowl and chill for at least 8 hours. This allows the flavors to blend well.
  • Stir before serving, serve chilled and topped with the garnish of your choice.
