Sourdough discard flatbread pizza is a delicious and quick lunch to make. The fermentation from the sourdough starter makes this a healthy choice that your whole family will enjoy!
What is flatbread?
Flatbread is bread made that is usually made without yeast. It usually contains flour, water, and salt. Sourdough starter creates its own wild yeast, but the discard doesn’t usually rise because the yeast is inactive.
What is sourdough discard?
Sourdough discard is the starter that hasn’t been fed yet or that you don’t want to feed. Because a sourdough starter is fed at a 1:1 ratio, it can quickly become too much to manage. To not have to use large quantities, most instructions for sourdough starter maintenance include a step that says something along the lines of “discard half”. This discard can be stored in the fridge but some people will throw it out. We don’t like to waste food so instead of throwing it away, we use the discard in “sourdough discard” recipes. Should I use an active starter or discard to make sourdough flatbread?
You can use either active or discard starter to make the flatbread. If your starter is active, the flatbread will be more fluffy and chewy, and it may take longer to cook. Inactive starter may rise, but only slightly and will have a thinner, crispier texture.
Do you make sourdough discard flatbread on the stove or in the oven?
For our family of four, I usually make them only on the stove because they are quick and I can serve one while the other is cooking. If you want to make several that you want to be done at the same time, you can take the flatbreads off the skillet and put it on a baking sheet. When the baking sheet is full, you can put it in a preheated oven until the toppings are melted or blended.

Everything Bagel- 2 tbsps of everything bagel seasoning
Cinnamon Sugar- ¼ cup of cream cheese and 2 tablespoons of cinnamon sugar
Peanut Butter and Honey- 2 tbsp of peanut butter and 1 tbsp of honey
Pesto Pizza- ¼ cup of pesto and ¼ cup of shredded mozzarella cheese
Garlic Bread- 2 tbsps of butter, a tsp of salt, and ¼-½ tsp of garlic powder
How to Make Sourdough Discard Flatbread Pizza
Ingredients:
1 cup sourdough discard
¼-½ cup of tomato sauce or diced tomatoes
¼ cup of shredded cheese
1 tbsp of dried Oregano
¼ tsp of garlic powder
Pinch of Salt
Preheat a skillet on the stovetop to medium heat. Add a tablespoon of olive oil and roll the pan around until the oil is evenly spread. Pour 1 heaping cup of sourdough starter into the skillet. You may need to use an offset spatula to help spread the starter around the skillet. Adjust the heat to medium-low.
Next, add a pinch of salt. When the flatbread is beginning to bubble on the top and the edges are set, flip the entire flatbread over.
Season the flatbread with your desired toppings. Next, cover the skillet with tented tinfoil or a lid that is offset to allow steam to escape. Steam is the enemy of the crispiness you’re looking for. If you are trying to make several that you want to be done at the same time, you can take the flatbread off the skillet and put it on a baking sheet. When the baking sheet is full, you can put it in a preheated oven until the toppings are melted or blended.
