Do I have to use parmesan cheese in this recipe?

You don’t have to use parmesan cheese, you can use just cheddar cheese or a combination of different cheeses, so long as the quantity matches the recipe’s total of 2 cups of cheese.

 

Can I use different spices in the Cheddar Parmesan Sourdough Waffles?

Absolutely! Use what spices your family enjoys. If you want this to become more of a Southern charm type waffle, add some paprika and crushed red pepper, only use cheddar cheese, and serve with raw, fried, or caramelized onions!

You can use Italian seasoning, rosemary, and/or thyme, or any combination you like. Or cut out all the spices except for the salt if that suits your family preference better!

Tips for making Cheddar Parmesan Sourdough Waffles:

You can use melted butter or oil. With either one, make sure that it cools before pouring it into the batter so that you don’t deactivate the starter or cook the eggs.

This recipe makes enough for about 12 servings. Feel free to halve it so that you don’t have leftovers, or double it so that you have enough to freeze!

Even though this recipe has baking soda, I recommend feeding your starter so that it is active and bubbly when you start baking.

This makes 12 servings of waffles. I know that sounds like a lot, but you can half this recipe if you would like. We eat them over two days, just toasting them in the toaster. If we aren’t going to eat them, then I will freeze them.

4 cups active sourdough starter

4 eggs

8 tablespoons melted butter or melted coconut oil

1 tablespoon garlic powder

1 tablespoon onion powder

2 teaspoons salt

1 cup shredded cheddar cheese

1 cup shredded parmesan cheese

2 tsp baking soda

 

How to Make Cheddar Parmesan Sourdough Waffles:

First, feed your starter up to 12 hours before you plan to make your Cheddar Parmesan Sourdough Waffles. You want your starter to be active and bubbly when you begin making the batter.

 

In a large bowl, combine 4 cups of active sourdough starter, 4 eggs, and 8 tablespoons of melted butter or melted coconut oil. Whisk thoroughly. Next, add 2 teaspoons of salt, 1 tablespoon of garlic powder, 1 tablespoon of onion powder, 1 cup of shredded cheddar cheese, and 1 cup of shredded parmesan cheese.

Finally, add the 2 teaspoons of baking soda and whisk thoroughly. Let it sit for about 5 minutes until the waffle batter has risen and become light and airy. While you are waiting for the batter to rise, plug in your waffle maker so that it can preheat.

 

Once the waffle iron is preheated, pour ½ cup of the batter into the iron. My waffle iron is smaller than others, so you may need to increase that to up to 1 full cup of batter into the iron. My waffle iron, being smaller, makes the waffle in about 3-4 minutes to my desired crispness. If your waffle iron is deeper and doesn’t have an automatic timer, it may need to cook for up to 7-8 minutes.
