This recipe makes 2 smoothies, requires 7 ingredients and with a good blender, takes 5 minutes to make. The coffee in this recipe can make this a great afternoon sweet with a caffeine boost and the bananas compliment the peanut butter flavor nicely. Even though this peanut butter dessert is gluten-free, it doesn’t require any specialty ingredients. This recipe is one of my favorites because it only calls for 4 ingredients, and they are all pantry staples that we have on hand. The recipe makes about 20 cookies, and each tray only takes about 10 minutes to bake. You can easily multiply this recipe to get a bigger yield, or you can make each individual cookie bigger!

These cookies contain a multitude of ingredients, but two of my favorite aspects of this recipe are the peanut butter and that it calls for a total of 3 cups of chips. I always use at least a portion of peanut butter chips for this recipe! These cookies are called quarter cookies because that’s the size that you measure out the dough balls to be. They have an awesome chewy texture and stay soft for longer because of the types of cookies they are!
Mini Peanut Butter Cheesecake Bites:

These mini cheesecakes are delicious and great to make for a crowd. We make them and bring them to potlucks and large picnics. They take a little bit of extra time to make because there are so many of them, but it’s worth the work. This dessert always looks pretty, and you can add a little extra pizzaz by changing up the mini cupcake liner that you use based on the occasion or season! We top them with shaved chocolate but you could add sprinkles or mini chocolate chips if you would like!
